Carved Lamb Station

• Frenched racks of Australian lamb, chef carved at the station and served with tarragon mashed potatoes drizzled with a Jack Daniel's peppercorn reduction

Simply Asparagus

• Asparagus salad with roasted new potatoes and tossed in a citrus and thyme dressing
• Asparagus frittata with pesto chevre
• Creamy asparagus and risotto timbale with smoked chicken
• Grilled asparagus and yellow pepper with lemon parsley aioli
• Stir-fry of asparagus and wild mushrooms with sesame

Carved Tenderloin

• Hereford steer tenderloin rubbed with Russian mustard and cracked pepper, grilled and chef carved at the station. Served with mini focaccia rolls with spicy tomato salsa and horseradish mousse.

• Hereford steer tenderloin herb grilled and chef carved at the station. Served in miniature kaisers with caramelized onion compote and a red onion and merlot reduction.

Caruban

• Griddled corn cakes with smoked salmon blooms and chimichurri pesto
• Marinated pork strips with grilled plantains and sherried black beans
